Rocky Mountain Cheddar
A traditional, milled curd cheddar that stands alone. (Get it?) It is also excellent in mac ‘n cheese and on sandwiches.
Aged Rocky Mountain Cheddar
Our cheddar aged for a minimum of one year for a sharper and more pronounced flavor.

Colby
A softer, milder version of cheddar. The best melting cheese we make – the choice for nachos.
Roulette
An aged sheep’s milk cheese produced by our sister company Coturnix Creamery. Produced in an Alpine style with a creamy, nutty flavor. Excellent grated on pasta or shaved onto a salad.
Juustoleipa (HOO-stah-lee-pah)
A mild cheese of Scandinavian origin, Juustoleipa is also known as “bread cheese.” It is baked during the cheese making process to caramelize the outside and form a crust. Delicious when warmed and topped with honey or jam.
Fresh Spreadable Cheese
A fromage blanc style cheese that works well as a substitute for cream cheese and ricotta. It bakes nicely in pasta dishes and cheesecakes, is tasty on bagels and makes a quick appetizer on crackers with jalapeño jelly. Available in both cow and sheep versions.
